Homemade mayonnaise

Kev loves garlic mayo and that has spurred me on to this recipe. The science behind mayo is basically the eggs need an acid to bind with the oil. The original recipe I found used lemon juice as the acid. Then one day disaster struck and I had no lemons! So thinking on my feet vinegar was added and it worked just as well. The thing I love about this mayo is what you can add to it. Add tomato sauce and Worcester sauce and you have prawn cocktail sauce to name just one use.


Ingredients
2 egg yolks (room temperature)
2 tablespoons vinegar or lemon (I used white vinegar)
200ml oil (I use our own olive oil but I think you can use any)
Salt to taste
1 teaspoon mustard (I used Dijon but it works as well with English mustard)

I used a hand blender to mix as I find this easier but you can use a food processer or a hand whisk.

Place the egg yolks and vinegar into the mixing jug and blitz until mixed.
Add a tablespoon of oil and blitz again. 
(You must add the oil gradually and I found this method works. It may take a little longer but the end result is worth it!



Keep adding the oil a tablespoon at a time and blitzing making sure all the previous oil has mixed in.
When all the oil has been added you add the mustard and salt to your taste.
That is all there is to it. Homemade mayo...you can't beat it!

 

Cabbage and bacon

This is one of those recipes that came about as we had a glut of cabbage and only bacon in the fridge. It is a healthy meal that fills you up. We tend to eat this for lunch but you could have it as a side dish for a change. Cabbage and bacon were made for each other, who would have known?
This recipe feeds 4 as a small lunch. It has 191 calories per serving with 12.8g of fat for those that need to know.

Strawberry Ice-cream (dairy free)

This recipe came from a friend who came to stay with us. She found it in a magazine she bought for her flight here. I can honestly say this is one of the best ice-creams I have made to date and no milk. I think because of the small amount of liquid it is not so icy and is softer to get out of the container. If you want to you can change the fruit for any...I have used cherries and it was delicious.

 




Ingredients
375g / 13oz strawberries, hulled and washed
80g / 3oz sugar
1 egg white

Spinach Tortilla

The trick to cooking a Spanish tortilla is in the method of cooking. It is a very different method from cooking an omelette. You will also need a good non-stick frying pan.

Ingredients
Spinach (as much as you want as it disappears when wilted)
2 Garlic cloves, finely chopped
1 large onion, diced
6 eggs
Salt to taste
Olive oil to fry with

Method.
Place enough olive oil in the frying pan, just to cover the bottom.

Weed killer

This is truly amazing stuff. It does exactly what it should do but without harming the garden or the animals.

 


The picture is not very clear but this is the next morning after spraying the weeds.


Recipe
1/2 pint red wine vinegar (I am sure any vinegar would do)
1 tablespoon salt
1 table spoon washing up liquid

Instructions
Mix all ingredients together making sure the salt has dissolved.
Place into a spray bottle and use.

This is so simple yet effective...I should bottle it and sell it!

About us...


The reason that I have decided to add this page is because people that look at this website will see photos of all the delicious food we eat here. I cook a mixture of Spanish and English and the recipes on this page will hopefully reflect this. As I am allergic to cows milk everything dairy is made from goats or sheeps milk. I am also allergic to shop bought eggs but funnily enough I can eat the eggs our hens produce. (Must be the food we give them). Anyway all the recipes on here can be changed to accommodate most other allergies too, just change the ingredients to suit yourself.
