Rum truffles

This is a recipe given to me by Kev´s mum. I tried it and they were fantastic. You can change the alcohol to suit yourself and your taste. Also if you cannot have butter I used vegetable fat but it must be reasonably hard setting for these to work.

8oz dark cooking chocolate (70% cocoa or above)
4oz butter
2 tablespoons rum

Over a pan of boiling water place a bowl and break chocolate into it to melt.
Melt the butter in a saucepan but don´t let it boil

Tomato sauce (for cooking)

This recipe is lovely. I use it to replace tinned tomatoes in recipes or as the tomato base for pizzas. I suppose that it could be eaten hot as a lovely thick tomato soup if you just added a little cream!

2kg tomatoes (the riper the better)
A sprig of fresh thyme.
3 garlic cloves
Olive oil
Salt and pepper to taste.

Heat the oven to 200 degrees
Peel and finely chop the garlic cloves
Cut the tomatoes in half.
Place in a roasting tin, cut side up and drizzle over a little olive oil...

Onion pie (sort of)

We love this recipe. We eat it as a starter if we have friends over and also as a main meal with salad. It is so simple and yet so tasty even our Spanish friends like it! This recipe also came from my amazing veggie book (Hugh Fearnley) but again I have played around with the recipe to suit us as I am sure you will.

Rough puff pastry (see making pastry for the recipe)
4 large onions
Olive oil
Balsamic vinegar.

Preheat your over to 200 degrees

Rough puff pastry

This is such an easy recipe...I got it from my amazing Hugh Fearnley book. I have changed it slightly as I can´t eat butter so I have added lard with my vegetable fat. This makes it fattier which is what is needed in this recipe. We have used this pastry to make onion pie and beetroot pie too. I also used it for apple pie which turned out delicious.

150g of plain flour
100g fat (I use half margarine and half can use all butter)
Pinch of salt
Iced water to mix

About us...

The reason that I have decided to add this page is because people that look at this website will see photos of all the delicious food we eat here. I cook a mixture of Spanish and English and the recipes on this page will hopefully reflect this. As I am allergic to cows milk everything dairy is made from goats or sheeps milk. I am also allergic to shop bought eggs but funnily enough I can eat the eggs our hens produce. (Must be the food we give them). Anyway all the recipes on here can be changed to accommodate most other allergies too, just change the ingredients to suit yourself. I hope that those of you who like cooking will try a few recipes and let us know how you got on by contacting us on
