This is one of those recipes that came about as we had a glut of cabbage and only bacon in the fridge. It is a healthy meal that fills you up. We tend to eat this for lunch but you could have it as a side dish for a change. Cabbage and bacon were made for each other, who would have known?

2 table spoons olive oil
1 clove garlic, finely chopped
2 medium onions
6 rashers of back bacon
320g of cabbage

Get a large frying pan and put in the oil. Heat the oil then add the garlic and diced onions. Cook until the onions are going transparent. Cut the bacon into small strips and add to the pan. Stir the onions and bacon and cook until the bacon is done. Shred the cabbage finely and add to the pan. Stir, turn the heat down and allow to cook. Stir occasionally to stop the bottom catching. Add salt and pepper to taste. It is ready when the cabbage is cooked. Serve with fresh bread.
