Cabbage and bacon

This is one of those recipes that came about as we had a glut of cabbage and only bacon in the fridge. It is a healthy meal that fills you up. We tend to eat this for lunch but you could have it as a side dish for a change. Cabbage and bacon were made for each other, who would have known?
This recipe feeds 4 as a small lunch. It has 191 calories per serving with 12.8g of fat for those that need to know.

Beetroot tarte tatin

This recipe was again inspired by the Hugh Fearnely cook book all about vegetables. We tried it just because we had beetroot growing in the garden. We were impressed because it is lovely (if you like beetroot!). Just another way to use this vegetable other than pickled!

Ingredients
Rough puff pastry
2 table spoons olive oil
2 teaspoons balsamic vinegar
2 teaspoons soft brown sugar
300 to 400g beetroot peeled and sliced if big (baby beets just scrub and halve)
Salt and pepper to taste.

Scotch Eggs

Kev really likes these and misses them while we are here, so I set about making my own so that I could eat them too. Beware though they are quite big. One served with a salad is a big lunch, but very enjoyable!

Ingredients
300g bread crumbs
Salt
Pepper
Sausage meat 400g
Flour (any type)
6 eggs
100g grated cheese
Oil to cook

Boil 4 of the eggs until hard and cool down in cold water. Peel and dry.
Put the oil on to heat up. You need it nice and hot.

Macaroni Peas

This little number was inspired by Hugh Fearnley Whittingstalls Veg Everyday recipe book. We tried it today for lunch and its so good thought I would share! We have decided to try to cut down on the meat intake as obviously we are growing loads of veg so this recipe will be used often when peas come into season, but until that time frozen peas work just as well.

Serves 2
400g peas...fresh or frozen
200g macaroni
50g butter (I used vegetable based fat as I can´t have butter)

About us...


The reason that I have decided to add this page is because people that look at this website will see photos of all the delicious food we eat here. I cook a mixture of Spanish and English and the recipes on this page will hopefully reflect this. As I am allergic to cows milk everything dairy is made from goats or sheeps milk. I am also allergic to shop bought eggs but funnily enough I can eat the eggs our hens produce. (Must be the food we give them). Anyway all the recipes on here can be changed to accommodate most other allergies too, just change the ingredients to suit yourself.
