Spinach Tortilla

The trick to cooking a Spanish tortilla is in the method of cooking. It is a very different method from cooking an omelette. You will also need a good non-stick frying pan.

Spinach (as much as you want as it disappears when wilted)
2 Garlic cloves, finely chopped
1 large onion, diced
6 eggs
Salt to taste
Olive oil to fry with

Place enough olive oil in the frying pan, just to cover the bottom.

Sage and Onion stuffing

I started to make this when I lived in England as I couldn't eat the boxed stuff anymore with my allergies. I guess over time I have refined the recipe and now I want to share this stuffing with all of you. It is so easy to make and so much better than the stuff you buy in the box.

1 large onion diced.
Half a loaf of stale bread (made into breadcrumbs)
1 teaspoon dried mixed herbs
1 teaspoon dried sage
Pinch of salt to taste.

Rabbit in red wine

I am sure there are recipes out there for rabbit, but we really struggled to find one anywhere on the internet that didn´t have obscure ingredients that we had never heard of. Rabbit has gone out of fashion in England as a meat which is a shame as it´s so good for you. It´s low in fat and is as healthy an option as chicken if not better. Onion pie (sort of)

We love this recipe. We eat it as a starter if we have friends over and also as a main meal with salad. It is so simple and yet so tasty even our Spanish friends like it! This recipe also came from my amazing veggie book (Hugh Fearnley) but again I have played around with the recipe to suit us as I am sure you will.

Rough puff pastry (see making pastry for the recipe)
4 large onions
Olive oil
Balsamic vinegar.

Preheat your over to 200 degrees

This is another recipe that our Spanish friend showed us. He said it is an ancient recipe that lots of people used to eat when they had no money. I love the fact that the Spanish have kept to their old ways and have mixed them with the new. When he was cooking this  I did think it was going to be very bland but another surprise it was delicious.

Serves 4

2 potatoes per person

Don´t know the Spanish name - Peppers and eggs

This recipe comes from one of our Spanish friends. It sounds quite boring but it is delicious. The peppers are sweet and the eggs just enhance the flavour. I know we will be eating this more often here now I know how to cook it.

To serve 4

4 large peppers (any colour)
3 cloves of garlic (sliced)
8 eggs (two per person)
50ml olive oil

Cut the peppers into 2/3 inch squares.
Put on a plate and add salt to your liking.

Chuletas de cordero al ajo cabañil ( Lamb chops with garlic)

This recipe was inspired by our local shepherd who wanted his lamb cooked a specific way for breakfast. It isn´t really a breakfast meal so I have put it in main meals section but it is fantastic as meat dishes go. It is so simple and with fresh meat brought to us by the shepherd it is a meal we will eat many times in the future.

Serves 4
1 kg lamb chops
A full head of garlic
50 ml of white wine vinegar
100 ml of water
200 ml olive oil
1/2 teaspoon of sugar

About us...

The reason that I have decided to add this page is because people that look at this website will see photos of all the delicious food we eat here. I cook a mixture of Spanish and English and the recipes on this page will hopefully reflect this. As I am allergic to cows milk everything dairy is made from goats or sheeps milk. I am also allergic to shop bought eggs but funnily enough I can eat the eggs our hens produce. (Must be the food we give them). Anyway all the recipes on here can be changed to accommodate most other allergies too, just change the ingredients to suit yourself. I hope that those of you who like cooking will try a few recipes and let us know how you got on by contacting us on
