This recipe was inspired by our local shepherd who wanted his lamb cooked a specific way for breakfast. It isn´t really a breakfast meal so I have put it in main meals section but it is fantastic as meat dishes go. It is so simple and with fresh meat brought to us by the shepherd it is a meal we will eat many times in the future.

Serves 4
1 kg lamb chops
A full head of garlic
50 ml of white wine vinegar
100 ml of water
200 ml olive oil
1/2 teaspoon of sugar
1kg potatoes
Salt
Black pepper

In a frying pan add a small amout of the olive oil and fry the chops on a high heat until cooked. Season with salt and pepper.

Peel and chop the potatoes into relatively thin slices and fry in a pan with the rest of the oil. Season with salt and pepper.

Peel the garlic and smash in a pestle and mortar, add the vinegar and water and mix well.

Share the mixture between the 2 pans,

 add a little sugar to each pan and cook on a lowish heat for 15 to 20 minutes, shaking the pans to stop the food sticking.

Serve hot

If you don´t like strong garlic you can cut it down to your own tastes. We ate this with crusty bread and a side salad.
