This recipe comes from one of our Spanish friends. It sounds quite boring but it is delicious. The peppers are sweet and the eggs just enhance the flavour. I know we will be eating this more often here now I know how to cook it.

To serve 4

4 large peppers (any colour)
3 cloves of garlic (sliced)
8 eggs (two per person)
50ml olive oil

Cut the peppers into 2/3 inch squares.
Put on a plate and add salt to your liking.

Cut the garlic into slices and put aside.

Heat a large frying pan or wok with olive oil
Add the peppers and cook for a few minutes, then add the garlic.
Cook until they are soft turning occasionally.

When the peppers are cooked crack the eggs into the pan, one at a time and turn each egg as you do this. (Do not worry about breaking the yolks as this will automatically happen).
When the eggs are cooked serve and eat with crusty bread!
