This is another recipe that our Spanish friend showed us. He said it is an ancient recipe that lots of people used to eat when they had no money. I love the fact that the Spanish have kept to their old ways and have mixed them with the new. When he was cooking this  I did think it was going to be very bland but another surprise it was delicious.

Serves 4

2 potatoes per person
1 large onion per person.
Olive oil

Peel the potatoes and onions and place in water and boil until soft. (The onions need to be really soft)
Once cooked cut the onions in half and place on a plate with 2 potatoes each.
With a fork smash the potatoes and onions up.
Add salt to taste.
Drizzle olive oil over the potatoes and onions and the eat with crusty bread.

This recipe is really easy and quick to prepare. The Spanish would eat this as a starter although we found it very filling.
