I am sure there are recipes out there for rabbit, but we really struggled to find one anywhere on the internet that didn´t have obscure ingredients that we had never heard of. Rabbit has gone out of fashion in England as a meat which is a shame as it´s so good for you. It´s low in fat and is as healthy an option as chicken if not better. We cooked this in the wood burner but it can be done in the oven or even on the hob, which ever is easiest. You could also add different vegetables if you wanted to.

Ingredients.  Serves 3
1/2 rabbit, jointed
3 carrots
2 onions
1/2 litre water (or veg stock)
1/2 litre red wine
1 teaspoon dried oregano
1 teaspoon dried rosemary
1/2 teaspoon dried sage.
Pinch of salt
Pepper to taste
A little flour and water mixed to thicken.

Chop the carrots and the onions. Place the veg and the meat into a casserole dish with a lid. Add the water, wine and herbs. Add the salt and pepper. Put the lid on the dish and place in the oven for about 2 1/2 hours. (180-200C). Stir occasionally and taste. Add more seasoning if needed.
Once cooked add the flour and water mixture to thicken the gravy.
