I started to make this when I lived in England as I couldn't eat the boxed stuff anymore with my allergies. I guess over time I have refined the recipe and now I want to share this stuffing with all of you. It is so easy to make and so much better than the stuff you buy in the box.

1 large onion diced.
Half a loaf of stale bread (made into breadcrumbs)
1 teaspoon dried mixed herbs
1 teaspoon dried sage
Pinch of salt to taste.
1 large egg
Olive oil

Put the olive oil and onions into a pan and fry until just cooked.
Put all the dry ingredients into a bowl and mix together.
When the onions are cooked mix them into the dry ingredients
Let the mixture cool.
Add an egg and mix thoroughly.
The stuffing can now go into the bird.
