This recipe is lovely. I use it to replace tinned tomatoes in recipes or as the tomato base for pizzas. I suppose that it could be eaten hot as a lovely thick tomato soup if you just added a little cream!

2kg tomatoes (the riper the better)
A sprig of fresh thyme.
3 garlic cloves
Olive oil
Salt and pepper to taste.

Heat the oven to 200 degrees
Peel and finely chop the garlic cloves
Cut the tomatoes in half.
Place in a roasting tin, cut side up and drizzle over a little olive oil.
Add the chopped garlic and the thyme sprig.
Place in the oven and cook until just browning on the top.
Take out of the oven and allow to cool for 20 mins or until you can hold them.
Take off the skins and place into a blender. Add all the juices from the pan and blitz until smooth.

You can either jar this and put in the fridge to use within the week or use immediately. As I said before would be nice reheated with some cream added for a lovely thick soup.
