Today the shepherd turned up with 3 goats (dead ones) to bone out and mince up. This was duly mixed with the pork fat and pimenton to make chorizo. We had breakfast with him and then spent 8 hours loading the 40kg of mixture into the sausage skins.
As you can see from the photos there was chorizo everywhere...we ran out of hooks in the end.
